Crystallized Ginger

Yesterday I tried a new recipe. It was “Chicken Baked in Thai Peanut Sauce”. It was very easy. You only needed three ingredients: 2 pounds of boneless, skinless chicken breasts; one 15 ounce can of coconut milk; and one box of A Taste Of Thai Peanut Sauce Mix. It was very delicious.  The recipe can be found at I highly recommend checking out their site. They had a lot of interesting recipes. I served it with rice and “Carrots Glazed With Honey And Crystalized Ginger”. For the Carrots you need: 1 pound baby carrots cut into bite size pieces, boiled until tender; 1/4 cup honey; and 2 tablespoons crystalized ginger, diced. Add honey and ginger to drained carrots. Heat on medium high 5 minutes or until warm. Serves 4. I hope you enjoy them! Emily
